Cauliflower cookies

Ingredients for 4 servings:

  • 500 g cauliflower florets
  • 1 m.-sized egg(s)
  • 200 g cheese, grated
  • 100 g cream cheese, preferably with herbs
  • 100 g diced ham
  • 1 pinch of salt
  • ½ bunch of spring onions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cook the cauliflower florets for about 10 minutes – they shouldn’t be too soft, but should still be slightly firm to the bite. Add a little salt for seasoning. Drain the florets well and puree with a hand blender. Mix in the egg and grated cheese. Preheat the oven to 220°C (top/bottom heat). Shape the cauliflower mixture into 7-8 cm round and 1 cm thick cookies and place them on a baking sheet lined with baking paper. Bake in the hot oven on the middle rack for about 15 minutes, until they begin to brown. Trim and wash the spring onions, and slice them into thin rings. Remove the cookies from the oven briefly, spread with cream cheese, sprinkle with spring onions and diced ham, and then bake for another 10 minutes. Tips: The cauliflower mixture can also be used as pizza dough. The topping can also be vegetarian and can be combined in any way you like.
