Cauliflower Curry with Rice
The perfect cauliflower curry with rice recipe with a picture and simple step-by-step instructions.
- 600 g Frozen cauliflower
- 3 piece Carrots
- 300 g Basmati rice
- 100 ml Soy cuisine or even cream
- 125 ml Vegetable broth
- Olive oil
- Lemongrass, chives, salt, pepper, curry powder, ginger powder
- Let the cauliflower thaw, peel the carrots and slice into pens. Fry with olive oil.
- Meanwhile, cook the basmati rice with a little lemongrass.
- When the vegetables are seared, deglaze with soy cuisine, add the vegetable stock and season with a lot of curry, a little salt, pepper and ginger. Let it boil down until there is only about half of the liquid and sprinkle with chives.
- Drain the rice and place on a plate, put vegetables with sauce on top and serve.
