Ingredients for 4 servings:
- 1 cauliflower
- 80 g butter
- 4 egg yolks
- 4 tbsp white wine, dry
- 4 tbsp water
- some salt
- 2 small lemons, the juice
- some pepper, white
- some Worcestershire sauce
- 40 g cream, whipped
- some parsley, chopped
- some dill, chopped
- some chives, chopped

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Clean and wash the cauliflower, and cook it whole in salted water until al dente. Melt the butter in a small pan. Combine the egg yolks, white wine, and water in a bowl. Whisk over a hot pan of simmering water until creamy. Remove from the pan and slowly stir in the melted butter. Season with salt, pepper, lemon juice, and Worcestershire sauce. Carefully stir in the cream and chopped herbs. Remove the cauliflower from the water, drain well, serve, and toss with the sauce. Serve with mashed potatoes.
