Cauliflower Massacre

Ingredients for 2 servings:

  • 1 small head of cauliflower
  • 500 g potato(s), waxy
  • 200 g spinach, frozen
  • 200 g soy yogurt (yogurt alternative)
  • 1 ½ tbsp spice mix (Masoor Dal Masala)
  • 1 tbsp soy sauce
  • 1 garlic clove(s)
  • 5 tbsp oil, neutral

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Divide the cauliflower into florets. Peel the potatoes and quarter or eighth them, depending on their size. Mix the soy yogurt with the masoor dal masala, soy sauce, oil, and the crushed garlic clove. Toss the cauliflower and potatoes with the yogurt marinade and place in a baking dish. Spread the still-frozen spinach on top. Bake in the oven at 200°C for approximately 45-60 minutes. Stir well every now and then. Everything should be well browned all over.
