Cauliflower salad

Ingredients for 1 servings:

  • 1 cauliflower
  • 100 ml vegetable stock
  • 2 tbsp vinegar
  • 1 tbsp parsley, shredded
  • salt and pepper
  • oil

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash and trim the cauliflower, then tear it into larger florets. Cook in salted water, covered, over moderate heat until slightly tender. Drain and place in a salad bowl. Combine the vegetable stock, oil, vinegar, a little salt, and pepper, and drizzle over the cauliflower. Gently toss the salad with salad servers and let it stand, covered, for at least 1/2 hour before serving. Sprinkle the cauliflower salad with finely chopped parsley before serving.
