Ingredients for 4 servings:
- 1 head of cauliflower
- 1 tbsp, sautéed nutmeg, freshly grated
- 1 tbsp, levelled sugar
- n. B. Salt
- 60 g butter
- 30 g breadcrumbs
- 3 tbsp, levelled Parmesan, grated
Instructions

a delicious side dish for meat dishes, a MUST on every hot buffet
Cut the stalk out of the cauliflower, leaving it whole. Wash it and simmer it in a pot of salted water with the nutmeg and sugar. The flesh should still be firm to the bite. Remove the cooked head with a slotted spoon and, after draining well, place it in a bowl. Tip: The liquid can be used as stock for other dishes. Melt the butter in a pan, add the breadcrumbs and brown, stirring frequently. Spread these evenly over the cauliflower. Finally, sprinkle the grated Parmesan cheese on top and bake in a hot oven with the grill function on until the cauliflower is also evenly browned. The cauliflower with brown butter is now ready to serve and makes an ideal accompaniment to any type of meat.
