Cauliflower with Egg Salsa

- 1 Cauliflower
- 4 Eggs
- 1 Lemon
- 2 tbsp Fresh, chopped thyme
- 2 tbsp Olive oil
- Salt
- Pepper
- Cook the cauliflower in salted water. While the cauliflower is cooking, the salsa is prepared. To do this, the 4 eggs are boiled for about 10 – 12 minutes (depending on the size of the eggs). Then let the eggs cool in cold water.
- Then peel and finely chop the eggs and put them in a bowl. Finely grate the lemon over the eggs and add the chopped thyme. Season with salt and pepper, add the olive oil and mix everything well, then add a little lemon juice to taste.
- Take the cauliflower out of the water, drain very well, arrange on plates and pour the salsa over the cauliflower.
- It can be a main course, a side dish or a starter.
