Celery and sweet potato soup

Ingredients for 8 servings:

  • 500 g sweet potatoes
  • 400 g celeriac
  • 1 onion(s)
  • 25 g ginger
  • 1 large red chili pepper(s)
  • 1 liter vegetable broth
  • 200 g sour cream
  • Cayenne pepper
  • Salt
  • possibly sesame

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes

with ginger

Peel the celery and potatoes and cut into large cubes. Peel and finely dice the onion. Peel and finely chop the ginger. Trim, deseed, and finely slice the chili pepper. Sauté the diced onion, ginger, and chili in oil. Add the potatoes and celery and cook briefly. Pour in the vegetable stock and simmer for about 25 minutes. Then purée the soup, stir in the sour cream, and season with salt and cayenne pepper. If desired, sprinkle with toasted sesame seeds before serving.
