Celery dumplings with cheese

Ingredients for 1 servings:

  • 100 celery, cleaned and finely grated
  • 100 g Parmesan, finely grated
  • 4 tbsp breadcrumbs
  • 1 m.-sized egg(s)
  • 50 g butter, room temperature
  • nutmeg
  • Celery salt, or salt
  • Pepper, white, from the mill

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 55 minutes

Little work, suitable for freezing, for about 25 pieces

Place the celery in a bowl. Add the Parmesan cheese, breadcrumbs, butter, egg, and seasonings, and mix everything into a dough. If the dough is still too wet, add a little more Parmesan cheese. Let the mixture set in the refrigerator for about 30 minutes. Using two wet teaspoons, form dumplings and simmer over moderate heat for about 5 minutes in clear broth, vegetable broth, or tomato soup. This also works wonderfully in pea and carrot broth or jarred salsify.
