Celery-radicchio salad with mandarins and walnuts

Ingredients for 4 servings:

  • ½ celery root
  • 2 heads of radicchio
  • 2 tangerines
  • 50 g walnuts
  • 200 g yogurt or soy yogurt
  • 2 tbsp sour cream
  • 1 tbsp honey
  • ½ tsp mustard, sweet
  • lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the celery, finely grate it, and drizzle with lemon juice. Tear the washed radicchio into bite-sized pieces. Peel the mandarin oranges, cut them into wedges, halve the wedges, and remove any pits. Roughly chop the walnuts. Prepare a marinade with the remaining ingredients and season to taste. Mix with the celery and mandarin oranges. Fold in the walnuts. Just before serving, fold in the radicchio leaves.
