Ingredients for 2 servings:
- 400 g carrot(s), organic
- 1 medium-sized organic apple, approx. 190g (aromatic variety such as Topaz or Jonagold)
- 1 tbsp sunflower seeds, whole
- 200 g cottage cheese
- 2 tbsp lemon juice, freshly squeezed
- 1 tbsp oil (linseed oil)
- 2 pinches of sea salt
- 1 pinch(s) of raw cane sugar

For the dressing, mix all the ingredients together in a salad bowl. Use the carrots and apple with the skin on if possible. This works best with organic carrots with thin skin and organic apples. If you are using carrots with thicker skin or non-organic carrots, it is better to peel the carrots and apple thinly with a vegetable peeler. Otherwise, simply wash the carrots and apple thoroughly and remove the green parts and cores. Then finely grate the carrots and apple, for example using a food processor, and mix with the dressing. Finally, fold in the sunflower seeds and leave the salad, covered, in the refrigerator for at least half an hour. This salad tastes great as a side salad and is enough for two portions. If you want to enjoy the salad for dinner, for example, the quantity is probably only enough for one portion.
