Celery soup with red wine

Ingredients for 5 servings:

  • 1 small celery root
  • 400 ml red wine
  • ½ cup sweet cream
  • Water
  • Salt or vegetable stock cubes
  • 3 potatoes, if desired

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel the celery, roughly chop it, and boil it in water, barely covering it, until it is tender. Meanwhile, reduce 400 ml of red wine to a gentle boil until about half the volume remains. Purée the celery with a hand blender, add the wine and cream, and season with salt or vegetable stock cubes. If you like, you can also cook and purée three potatoes with it. This red wine celery soup is received with varying degrees of success. Some people love it, others hate it at all. In any case, it is a very healthy dish.
