Cereal Risotto with Vegetables

The perfect cereal risotto with vegetables recipe with a picture and simple step-by-step instructions.

  • 150 g Vialone rice
  • 60 g Whole grain rice
  • 60 g Barley grains
  • 60 g Spelled grains
  • 5 dl Vegetable broth
  • 2 dl White wine
  • 0,5 Pc. Small onion
  • 1 Pc. Clove of garlic
  • Thyme, laurel, Kelke
  • 1 Pc. Onion
  • 2 Pc. Garlic
  • 3 tbsp Extra virgin olive oil
  • 2 Poles Celery
  • 3 Pc. Carrot yellow
  • 1 Pc. Red peppers
  • 1 Pc. Green peppers
  • 2 Pc. Beefsteak tomatoes fresh
  • 1 Pc. Spring onion just that
  • Green
  • Herbs according to the season
  • At will
  • 50 g Butter
  • Grated cheese to taste

Preparations:

  1. The evening before, rinse whole rice, barley and spelled grains with cold water and soak. On the same day, cook the grains with the soaking water normally or in a steam cooker. I cooked them in the pressure cooker because my time was short. Cover with cold water. Onion garnished with bay leaves and cloves, plus 1 sprig of thyme and oregano (you can also add a little pepper but no salt) and cook for 10-15 minutes. Strain, save the cooking liquid. Wash, prepare and cut the vegetables into cubes. Peel and chop the onion and garlic.
  2. Heat olive oil in a saucepan. Sweat the onion and garlic in it, sweat the Vialone rice and grains, deglaze with half of the wine, allow to reduce. Fill up the cooking liquid to approx. + – 5-6 dl with water or bouillon, bring to the boil. Deglaze the risotto with it, but only until the rice is covered with the grains. Add vegetables and herbs, cover again with liquid. Proceed in this way until everything is soft, but still firm to the bite.
  3. Risotto is cooked firm to the bite but not ready yet. Now we add the butter while stirring, then the cheese, stir again. Then the rest of the wine is added, which gives the risotto that certain something and breaks the cooking process. If the risotto is too firm, add a little wine or cooking liquid. A risotto has to be a fairly soft pulp.
