Chanterelle fritters

Ingredients for 2 servings:

  • 200 g chanterelles
  • 2 rolls from the day before
  • 2 eggs
  • 250 g minced meat, mixed
  • 1 tbsp vegetable stock powder
  • 2 tbsp parsley, finely chopped
  • n. B. Breadcrumbs, approx. 2 tbsp
  • n. B. Salt and pepper from the mill
  • Oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Soak the rolls in lukewarm water and squeeze dry. Place the minced meat in a bowl. Add the squeezed-out rolls and eggs and mix. Season with vegetable stock, salt, and pepper. Clean and finely chop the chanterelles. Add them to the minced meat mixture along with the parsley and mix. Add enough breadcrumbs to form a thick, but not too firm, mixture. Form the mixture into small cakes. Heat oil in a pan. Add the cakes in batches to the pan and fry until crispy on both sides.
