Chayote – Exotic Type of Vegetable

The chayote (also known as the prickly cucumber) resembles the pear in both shape and size. Depending on the variety, the skin is light to dark green, smooth to wavy and sometimes has soft prickles. Inside is a large, smooth core that is edible but not usually eaten.

Origin

Costa Rica, Colombia.

Taste

The flesh is firm, ivory in color and has a rather subtle taste. It is reminiscent of zucchini, cucumber or pear.

Use

The chayote can be used both raw and cooked. Before eating, the peel should be cut off thinly. Sticky milky juice escapes when peeling, so it is advisable to peel the chayote under running water. Then halve the fruit lengthwise and remove the core.

Storage

The fruit can be kept refrigerated for up to four weeks!
