Ingredients for 4 servings:

  • 500 g potatoes (floury)
  • 100 g feta cheese, mature Manchego or goat cheese)
  • 4 spring onions, finely chopped
  • 1 tsp, heaped thyme, freshly chopped
  • 1 egg(s), beaten
  • 1 tbsp lemon juice
  • salt and pepper
  • Flour, for dusting
  • 4 tbsp olive oil (for frying)
  • Chives, fresh

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 40 minutes

Boil the potatoes with their skins on for 25 minutes. Drain and peel off the skin. Place the potatoes in a bowl and mash or crush well. Add the spring onions, cheese, thyme, egg, and lemon juice, and season with salt and pepper. Mix everything well, cover, and refrigerate for 1 hour. Place the flour on a plate. Use a teaspoon to form small portions into walnut-sized balls between your palms and flatten them slightly with your hand. Heat the oil in a pan. Roll the biscuits in flour and fry until golden brown on both sides. Drain on kitchen paper. Garnish with chives and serve. A perfect accompaniment to light vegetable dishes.
