Cheese and salami salad

Ingredients for 4 servings:

  • 200 g Gouda, middle-aged or old
  • 100 g Emmental cheese
  • 200 g salami in one piece
  • 1 onion(s), red
  • ½ bell pepper(s)
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • ½ bunch parsley
  • 1 garlic clove(s)
  • salt and pepper

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Spicy salad with two types of cheese and salami

Cut the cheese into small cubes or strips and dice the salami. Finely dice the onion. Roast the peppers in the oven or on the grill, remove the blackened skin, and dice the peppers. Finely chop the parsley. Season the lemon juice with a little salt and pepper, along with the crushed garlic and parsley. Then mix with the olive oil. Add the cheese, salami, onion, and peppers to the vinaigrette and let it marinate in the refrigerator for at least 2 hours.
