Cheese dumplings

Ingredients for 4 servings:

  • 600 g flour
  • 4 eggs
  • n. B. water
  • some salt
  • 250 g cheese (Pinzgauer beer cheese)
  • 100 g cheese (Räßkäse)
  • some butter
  • Chive rolls
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Simply Austrian

First, knead all the dough ingredients (flour, eggs, water if needed, and salt) into a smooth but firm dough. Grate the dough through a spaetzle grater into boiling salted water and strain as soon as the dumplings float. Cool the dumplings in cold water. Dice the cheese and melt the butter in a pan. Add the dumplings and cheese and fry until the cheese is stringy. Season with salt and pepper and sprinkle with chives. Serve the Kasnocken with a green salad and, if desired, fried onions.
