Vegetarian Spaghetti Carbonara

Ingredients for 5 servings:

  • 500g spaghetti
  • 5 tbsp oil
  • 5 garlic cloves
  • 5 tbsp oregano
  • 5 eggs
  • Salt
  • 1 pinch(s) of pepper
  • 100 g Parmesan, freshly grated or Grana Padano

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Who misses meat anymore!

Boil water for the spaghetti. Gently fry the uncut garlic cloves in oil over medium heat. Do not allow the garlic to overcook. Add the oregano to the oil and roast with the garlic over low heat for about 1 minute. Add the spaghetti to the water and cook until al dente, reserving about 1 cup of the pasta water when draining. In a bowl, whisk the eggs with the grated Parmesan and pepper. Add the drained spaghetti to the pan with the oregano and garlic oil and fry with the Parmesan and egg mixture. Add more pasta water as desired during frying to achieve the perfect consistency.
