Ingredients for 4 servings:

  • 40 g butter, soft
  • 2 eggs
  • 100 g quark
  • 65 g cheese (Gouda)
  • 100 g white bread, crust removed
  • 120 ml milk
  • salt and pepper
  • nutmeg
  • Oil, for frying

Cream the butter until fluffy. Squeeze the quark thoroughly into a cloth and gradually add it to the butter along with the eggs. Cut the white bread into small cubes, add to the mixture, and stir in the grated Gouda cheese. Season with salt, pepper, and grated nutmeg. Then add enough milk to make the mixture compact and moist. Form the mixture into small patties with a diameter of 4 cm (no more than 1 cm high). Heat oil in a pan and fry the patties slowly over medium heat until golden brown on both sides. Then remove any cooking fat with kitchen paper. Serve on leaf salad.
