Cheese mashed potatoes

Ingredients for 2 servings:

  • 500 g potatoes
  • 200 ml milk, more or less as needed
  • possibly condensed milk
  • Salt
  • nutmeg
  • butter
  • 200 g cheese, preferably medium-aged Gouda

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and cut them into small pieces. Bring them to a boil in a pot with water and a pinch of salt on the stove. In the meantime, dice the cheese into pieces approximately 1.5 x 1.5 cm in size. You can easily check if the potatoes are cooked by pricking them with a sharp knife. When they are soft, reduce the heat and drain the water from the pot. Add a small knob of butter to the potatoes and a little milk, about a cupful to start with. Then return the pot to the slightly cooled stovetop and start mashing the potatoes. This should be done quickly, otherwise the mixture will burn quickly. Gradually add milk (canned milk to taste) until you have a creamy, thick mash. Season with salt, butter, and nutmeg. Reduce the heat even further and gradually add the cheese, stirring in. It will slowly begin to melt into the hot mash. Depending on your taste, you can let it melt completely and pull strings, or leave it in cubes. Serve with a fresh salad.
