Crispy light yogurt waffles

Ingredients for 1 servings:

  • 2 eggs
  • 125 ml milk, 3.5%
  • 75 ml mineral water
  • 150 g natural yogurt
  • 200 g wheat flour
  • 3 tsp, leveled baking powder
  • 8 drops of flavoring (orange or vanilla flavor)
  • 4 tbsp sugar
  • Oil for the waffle iron
  • Powdered sugar or cinnamon sugar
  • possibly compote, hot

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Combine the egg yolks with the milk, mineral water, yogurt, sugar, and baking flavor. Combine the baking powder and flour, sift them over the yogurt mixture, and whisk vigorously. Beat well to eliminate lumps. Finally, carefully fold in the beaten egg whites with a whisk. Heat the waffle iron, brush it thinly with oil, and bake the batter in batches. This batter will make about 10 thin waffles. The finished waffles can be sprinkled with powdered sugar or cinnamon sugar, or served with hot fruits like cherries or plums.
