Ingredients for 4 servings:
- 50 g butter
- 200 g cheese, grated
- 50 g flour
- 250 ml milk
- 4 egg yolks
- 6 egg whites
- Spice(s) to taste
- salt and pepper
Instructions

Lightly fry the butter and flour in a saucepan. Whisk in the milk, forming a thick slurry. Let cool, then stir in the egg yolks and cheese. Beat the egg whites until stiff peaks form and fold the beaten egg whites into the mixture. Season to taste with salt, pepper, and other spices. Bake on the second rack from the bottom for 30 minutes at 200°C.
