Cheese spaetzle with onions

Ingredients for 4 servings:

  • 375 g flour
  • 200 ml water
  • 2 eggs
  • 1 pinch of salt
  • 200 g cheese (Emmental or Gouda)
  • 3 onions
  • 30 g butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Finely grate the cheese. Peel the onions and slice into thin rings. Put the flour in a bowl. Whisk the eggs and add to the flour. Add the salt and water. Mix the flour, eggs, salt, and water. Place a large pot of salted water on the stovetop. Add the dough in batches to the hot water. Either use a spaetzle grater, if available, or spread the dough thinly on a wooden board and scrape it into the water in thin strips with a knife. The spaetzle are ready when they float to the surface. Remove with a slotted spoon and drain well. Preheat the oven to 200°C (top/bottom heat). Grease a baking dish. Alternate layers of spaetzle and grated cheese in the dish, then top with cheese. Place in the oven and bake for approx. 10-12 minutes. Meanwhile, melt the butter in a pan and fry the onion rings until golden brown. Serve the onions with the cheese spaetzle.
