Ingredients for 1 servings:
- 2 shallots
- 1 tsp olive oil
- 400 g tartar
- 2 tbsp tomato paste
- 2 tsp mustard
- 2 tsp ketchup
- 1 pinch(s) of iodized salt
- 1 pinch(s) of pepper
- 1 pack of pizza dough, from the refrigerated section
- 75g Cheddar or Chester cheese, 50% fat
- 3 gherkins
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
for a 12-cup muffin tray
Preheat the oven to 200°C top/bottom heat (180°C fan/convection oven, gas mark 3). Peel the shallots. Dice one shallot and slice the other into rings. Heat the oil in a pan over high heat and fry the tartar until crumbly. Add the diced shallots, tomato paste, mustard, and ketchup, sauté briefly, and season with salt and pepper. Roll out the pizza dough according to the package instructions and cut into 12 rectangles. Line 12 silicone muffin cases with the dough, tucking in the edges. Pour the tartar mixture into the cases and bake in the oven on the middle rack for about 20 minutes. Quarter the cheese slices. Top the muffins with the cheese slices about 5 minutes before the end of the baking time. Slice the gherkins and top the muffins with the gherkin slices and shallot rings. Serve the cheeseburger muffins.
