Ingredients for 4 servings:

  • 500 g flour, manjok flour (tapioca, pouvilho doce)
  • 100 g Parmesan, grated
  • 200 g cheese (Gouda), grated
  • 200 g cheese, Emmental, grated
  • 250 ml milk
  • 250 g margarine
  • 1 tbsp salt
  • 1 pinch(s) of sugar
  • 2 eggs

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cheese balls from Brazil

Place the flour in a bowl. Boil the milk, margarine, salt, and sugar in a saucepan. Slowly add this mixture, while still hot, to the flour while kneading. (Stop when the dough begins to firm up. It should be slightly moist.) Let the dough cool. Using a hand mixer, mix in the eggs and cheese. Roll the dough into small balls (sized like ping-pong balls) and place them on a baking sheet lined with parchment paper. Bake in a preheated oven at 200°C (400°F) until golden brown (approx. 18 minutes). Serve while still warm.
