Ingredients for 1 servings:
- 70 g cream cheese
- 500 g low-fat curd cheese
- 60 g sugar
- 1 packet of vanilla sugar
- 4 eggs
- 2 tbsp lemon juice, freshly squeezed
- some lemon zest
- 1 tsp vanilla extract
- 1 pinch of salt
- 130 g wheat flour
- some butter for the waffle iron
Instructions
Working time approx. 10 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes
Combine all ingredients in a mixing bowl with a hand mixer until a creamy batter forms. Meanwhile, heat the waffle iron to level 2 out of 5. Brush the waffle iron with a little butter and ladle the batter into the center of the waffle iron. Bake the waffles until golden brown. Let the cheesecake waffles cool before serving; this is when they taste best. This batter makes about 10 waffles.
