Ingredients for 1 servings:

  • 6 eggs
  • 200 g honey
  • 180 g semolina (spelt semolina)
  • 2 packs of lemon(s) – zest, grated
  • 1 tsp baking powder (cream of tartar)
  • ½ tsp vanilla
  • 1 kg quark
  • 1 pinch of sea salt
  • possibly grease for the mold
  • possibly breadcrumbs for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

with semolina

Separate the eggs. Beat the egg whites with the sea salt until stiff and set aside. Whisk the egg yolks with the honey. Then stir in the vanilla, lemon zest, and quark. Now add the semolina and baking powder. Mix everything well. Finally, fold in the beaten egg whites. Pour the mixture into a springform pan lined with baking paper or well-greased and dusted with breadcrumbs. Bake in a preheated oven at 175°C for 60 minutes on the middle rack. Tip: This is a light, not very sweet cake that can be further varied with fruit of your choice.
