Ingredients for 1 servings:
- ½ organic lemon(s)
- 2 eggs, size M
- 5 ml liquid sweetener, alternatively 35 – 50 g sugar
- 300 g cream cheese, low-fat
- 10 g butter, soft
- 25 g durum wheat semolina
- 2 g psyllium husk flour
- 3 g baking powder
- 1 pinch of salt

Wash the lemon thoroughly and halve it. Set aside one half for another recipe. Remove any seeds from the rest and cut the lemon into approximately 1.5 cm cubes. Combine all ingredients in a blender and blend thoroughly until no lemon pieces are visible. Divide the mixture among 5 baking dishes. Use about 95 g per dish. Use the “Bake” program in the Ninja Foodi Grill. Set the temperature to 150 °C (300 °F) and bake the cheesecakes for 20 minutes until light brown. A note on sweetener/sugar: In both cases, taste to see if the mixture is sweet enough.
