Cherry cake made from sponge cake

Ingredients for 1 servings:

  • 200 g butter
  • 4 egg yolks
  • 1 lemon(s), the peel
  • 150 g powdered sugar
  • 1 packet of vanilla sugar
  • 200 g flour
  • ½ pack of baking powder
  • 4 egg whites, beaten
  • Grease for the tray
  • Powdered sugar, for dusting
  • lots of cherries

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 25 minutes

Cream the butter until fluffy. Add the egg yolks, grated lemon zest, powdered sugar, and vanilla sugar. Fold in the flour, sifted with the baking powder, and the beaten egg whites. Spread the batter onto a greased baking sheet and generously top with cherries. Bake in the oven on the bottom rack at 180 degrees Celsius for about 30-40 minutes. Let cool and sprinkle with powdered sugar.
