Pasta with fresh tomatoes and scampi

Ingredients for 4 servings:

  • 500 g pasta (e.g. spaghetti, ring pasta, farfalle)
  • 500 g fresh tomatoes
  • 10 large scampi (frozen)
  • 3 tbsp olive oil
  • 2 tbsp parsley, chopped
  • 2 cloves garlic, large
  • 1 pinch of paprika powder, hot
  • 1 cl brandy
  • 1 pinch(s) of salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat oil in a large pan, add the garlic cloves, and cook until golden brown. Then add the scampi and season with salt. They should cook for no longer than 3 minutes. Sauté or fry the tomatoes, bell peppers, and parsley in the same pan over high heat for about 5 minutes. Add the scampi and let stand for about 5-10 minutes. Meanwhile, boil water, add a little salt, add pasta, then drizzle with olive oil and cook until al dente (firm to the bite).
