Cherry Quark Snails

Ingredients for 1 servings:

  • 450 g flour
  • 125 g sugar
  • 75 g butter
  • 1 medium egg yolk
  • 175 g low-fat curd cheese
  • 6 tbsp oil
  • 6 tbsp milk
  • 2 tbsp vanilla sugar
  • 1 pinch of salt
  • 1 tbsp baking powder
  • 200 g cherry(s) from the jar
  • 6 tbsp jam (cherry jam)
  • 40 g amaretti biscuits
  • 60 g marzipan
  • Powdered sugar for dusting or as a glaze

Crumble the amaretti biscuits into very small pieces and set aside. Grate the marzipan, crumble together 150g flour, 75g sugar, softened butter in pieces and egg yolk. Chill. Mix the quark, milk, oil, 50g sugar, vanilla sugar and salt. Mix 300g flour and the baking powder and gradually add to the quark mixture. Knead well. Roll out the dough into a rectangle approx. 20 x 40cm and spread with jam, then sprinkle with the amaretti biscuits and top with the cherries. Starting at the long side, roll it up tightly; this requires a bit of skill. If possible, push the cherries into the roll with your fingertips. Cut the ends of the roll straight, then cut into approx. 3cm thick slices and place them on the baking paper like snails. Flatten slightly. Sprinkle the snails with the marzipan crumbs. Bake one after the other in the oven at 200°C (convection oven) or 225°C (electric oven) for approximately 10-12 minutes and let cool. Finally, dust with powdered sugar or decorate with icing. 330 kcal per serving. Tip: Variations in the filling are, of course, possible, e.g., marzipan peach, raspberry cream cheese, or use other cookies instead of amaretti biscuits, speculaas, or chocolate coins. The sprinkles can also be omitted if desired.
