Ingredients for 1 servings:
- 150 g sugar
- 150 g brown cane sugar
- 1 pinch of salt
- 250 g butter
- 2 eggs
- 1 tsp lemon juice
- 400 g flour
- ½ pack of baking powder
- 15 g matcha powder
- 1 pinch(s) cardamom powder
- 150 g dates
- 150 g cashew nuts
Instructions
Working time approx. 1 hour 15 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 50 minutes
Melt the butter in a saucepan over low heat. Combine the white and brown sugars and salt with the two eggs, then add the melted butter. Add the lemon juice and stir until creamy. Then add the flour, baking powder, matcha, and cardamom (each sifted) and mix everything into a dough. Chop the dates and cashews with a knife and add them to the dough. Let the dough stand for about 20 minutes or refrigerate. Preheat the oven to 180°C (top/bottom heat). If you prefer rounder, “prettier” cookies, shape the dough into small balls by hand and place them on a baking sheet. I prefer to use a spoon to portion them out, which gives the cookies a more cookie-like appearance. I always make 4 trays of 9 cookies each. The baking time is about 15 minutes.
