Chia carrot and potato soup

Ingredients for 2 servings:

  • 1 small onion(s)
  • 1 clove(s) garlic
  • 1 tbsp rapeseed oil or wheat germ oil
  • 100 g carrot(s)
  • 100 g potatoes
  • Ginger powder (up to 10 g)
  • 400 ml water
  • 1 orange(s)
  • 4 tbsp chia seeds
  • salt and pepper
  • chili powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Peel and dice the onion. Peel and press the garlic. Wash the carrot, peel and dice if desired. Peel, wash, and dice the potatoes. Juice the orange. Sauté the onions and garlic in oil until translucent. Add the vegetables and ginger. Pour in water and simmer for about 10-15 minutes, until everything is tender. Puree everything and add the orange juice. Season with salt, pepper, and chili. Now add the chia seeds. Serve fresh in plates or bowls.
