Ingredients for 1 servings:
- 240 g flour
- 60 g cornstarch
- 200 g butter
- 75 g powdered sugar
- 2 tbsp vanilla sugar
- 1 m.-sized egg(s)
- Flour for the work surface
- 1 pack of marzipan, ready to use
- 2 egg whites
- 3 tbsp powdered sugar
- 100 g almond flakes

Working time approx. 50 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 2 hours 5 minutes
Crispy marzipan delight with almond crust
Knead the dough ingredients until smooth, wrap in cling film and let rest in the refrigerator for 1 hour. On a floured surface, roll out the dough to about 3 mm thick and cut out any desired shapes. Cut out the same amount of marzipan and the same shapes and place them on top of each other (dough on the bottom, marzipan on top. You can also place both on top of each other and cut them out, but this will result in too many unusable scraps). Beat the egg whites until stiff (but not stiff) and sweeten with a tablespoon of powdered sugar. Sprinkle some egg whites onto each cookie and spread them to the edge. Sprinkle with flaked almonds. Bake in a preheated oven at approx. 180°C (top/bottom heat) for 12-15 minutes until light golden brown. Sprinkle the cooled cookies with the remaining powdered sugar.
