Ingredients for 4 servings:
- 4 chicken legs
- 8 potatoes
- 1 large onion(s)
- 3 garlic cloves
- 4 bell peppers, red
- 2 beefsteak tomatoes
- 1 tbsp, heaped rosemary
- 1 tsp pepper
- 1 tsp, heaped thyme
- Chicken seasoning
- 1 tsp paprika powder
- Salt
- 125 ml red wine
- olive oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours
Pour some olive oil into a bowl. Add rosemary, pepper, thyme, paprika, and salt. Mix everything together. Peel the onions and slice them into rings. Chop the peppers and tomatoes. Wash the potatoes and cut them into wedges. Add the onions, tomatoes, and potatoes to the marinade, press the garlic and add them. Mix everything well. Season the chicken thighs with the chicken seasoning. Line a deep baking tray with aluminum foil and spread the potatoes and vegetables on top. Place the chicken on top. Pour the red wine over the chicken and bake in the oven at 180 degrees Celsius for 1 1/2 hours.
