Chicken and Vegetable Pan Sambal Oelek

Ingredients for 4 servings:

  • 400 g chicken breast
  • 1 onion(s), red
  • 2 cloves garlic
  • Flour
  • Soy sauce
  • 1 zucchini
  • 2 carrots
  • 1 bell pepper(s), red
  • ½ bunch of spring onions
  • 1 jar bamboo shoot(s)
  • 250 ml orange juice
  • 5 tbsp honey
  • 1 tsp sambal oelek
  • Cayenne pepper
  • Salt
  • curry powder
  • cumin
  • Ginger
  • Peanut butter
  • sesame oil
  • Peanuts, salted

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Cut the chicken breast into fine cubes. Dust with flour and marinate in a bowl with soy sauce. Peel and finely chop the onions and garlic. Finely slice the zucchini, carrots, and bell peppers. Slice the spring onions into thin rings. Heat sesame oil in a large pan or wok. Add the garlic, onion, and meat pieces and sear on all sides. Reduce heat. Add the vegetable strips and sear briefly. Deglaze with orange juice. Add the spring onions and bamboo shoots. Season to taste with honey, soy sauce, and sambal oelek. Add the remaining spices to taste, depending on what you have on hand. All delicious. Serve with basmati rice.
