Chicken Breast Fillet in Serano Ham
The perfect chicken breast fillet in serano ham recipe with a picture and simple step-by-step instructions.
For the chicken breast fillets:
- 4 Chicken breast fillets
- 8 Discs Serano ham
- 8 leaves Basil
- 1 tbsp Olive oil
- Pepper
For the lukewarm tomato salad:
- 650 g Cocktail tomatoes
- 1 tsp Olive oil
- Salt pepper
- 1 pinch Sugar
- 2 tbsp Honey-Ginger vinegar
Kritharaki:
- 350 g Kritharaki
- Salt water
Chicken breast fillets:
- Rinse the chicken breast fillets, pat dry and pepper. Pluck the basil leaves from the stems, wash and pat dry.
- Place two basil leaves on each chicken breast fillet, wrap the whole thing with two slices of Serano ham and secure with toothpicks (or roulade needles).
- Heat the oil in a pan and fry the chicken breast fillets all around for about 12-15 minutes.
Lukewarm tomato salad:
- Pluck the tomatoes from the panicles, wash and rub dry.
- Heat the oil in a pan, add the tomatoes and melt, season with salt, pepper and a pinch of sugar.
- Deglaze with the honey-ginger vinegar and heat again briefly.
Kritharaki:
- Boil the kritharaki in plenty of salted water until firm to the bite and serve with the chicken breast fillet and the lukewarm tomato salad on preheated plates.
A notice:
- Kritharaki: The often (also here) used description of this Greek noodle specialty as rice noodles is simply wrong. They are not made from rice (flour) but from durum wheat semolina and only look like a very large grain of rice.
