Chicken breast salad with strawberries and apple

Ingredients for 1 servings:

  • 200 g chicken breast fillet(s)
  • 1 apple
  • 125 g strawberries
  • 100 g feta cheese
  • 30 g leaf spinach
  • 1 ½ tbsp Balsamic vinegar Bianco
  • 3 tbsp olive oil
  • e.g. pine nuts
  • Crema di Balsamic vinegar, dark
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 16 minutes; Total time approx. 36 minutes

First, season the chicken breast fillet with salt and pepper on both sides and spread the black balsamic vinegar over it. Then, cook the meat for six minutes on each side, then apply another coat of balsamic vinegar and cook for another two minutes on each side. Wash and drain the spinach leaves, and spread them on a plate. Dice the apple, strawberries, and goat cheese into approximately 2 cm pieces. Once the chicken breast fillet is cooked, let it cool slightly and cut into 2-3 cm wide strips. Now place the meat on the spinach leaves, then arrange the apple, feta cheese, strawberries, and pine nuts around it. Finally, drizzle the white balsamic vinegar and olive oil over the salad.
