Chicken breast with broccoli, fried

Ingredients for 4 servings:

  • 25 g butter
  • 450 g chicken breast, cut into strips
  • 3 tbsp soy sauce, dark
  • 350 g broccoli, cut into florets
  • 225 g beans, fine green
  • 1 bunch of spring onions
  • 2 tbsp flour, preferably whole grain
  • 2 oranges, juice
  • 1 bunch basil, fresh

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

To prepare, combine the flour with the orange juice and set aside. Heat the butter in a wok or frying pan. Add the chicken breast. Add a few drops of soy sauce. Stir-fry gently for 5 minutes, until the chicken begins to brown. Stir in the broccoli florets, trimmed beans, and half of the finely chopped spring onions, and stir-fry for another 3 minutes. Stir in the orange juice and flour mixture and stir-fry for about a minute, until the sauce thickens. Stir in the chopped basil and the rest of the spring onions, then serve quickly. Serve with rice or noodles.
