Chicken breast with fresh herbs and Parma ham

Ingredients for 4 servings:

  • 4 chicken breast fillets
  • 4 slices of Parma ham
  • 2 stalks parsley, flat-leaf leaves
  • 2 stalks basil, leaves
  • 2 stalks of sage, leaves
  • 4 tbsp olive oil
  • 150 ml cream
  • 200 ml dry white wine
  • Salt
  • Black pepper, freshly ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut a slit in the sides of the chicken breast fillets, insert the herbs into the wedges, wrap each with a slice of ham, and season with salt and pepper. Brown the pieces of meat in a pan in heated olive oil for 2-3 minutes on each side. Pour in the white wine and simmer, covered, for another 10 minutes. Wrap the meat in aluminum foil and leave it for a while. Meanwhile, pour the cream into the pan’s stock, bring to a boil, reduce by 2/3, and season generously with salt and pepper. Serve with tagliatelle.
