Chicken breast with kidney beans

Ingredients for 2 servings:

  • 10 basil leaves, chopped
  • 2 chicken breast fillets
  • 3 tbsp oil, sunflower oil
  • 10 cherry tomatoes, quartered
  • 1 onion(s), chopped
  • 1 clove(s) garlic, chopped
  • 1 can kidney beans, drained weight 420 g
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

and fresh basil

Mix the basil, garlic, onion, and cherry tomatoes. Heat the oil in a pan and sear the fillets on both sides. Push the meat to the side of the pan and add the onion, garlic, and tomato mixture to the pan. Simmer over low heat until the onions are translucent. Remove the meat from the pan. Add the drained beans to the pan, stir, and bring to a boil briefly. Season with salt and pepper. Serve with the fillets.
