Ingredients for 4 servings:
- 600 g chicken breast fillet(s)
- 400 g peach(s) (can)
- 1 large onion(s)
- 200 ml white wine
- 200 ml cream
- 1 tbsp lemon juice
- 1 tsp curry powder
- salt and pepper
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Slice the peaches (set some aside) and finely dice the onions. Sauté the onions in a pan until translucent. Add the peach slices, white wine, cream, lemon juice, curry powder, salt, and pepper, and simmer gently for 5 minutes. Purée the mixture very finely with a hand blender. Season the sauce again to taste and add the remaining peach slices to the sauce. Fry the chicken breast in a separate pan until crispy, seasoning with salt and pepper. Add the resulting cooking juices to the peach sauce. Arrange the meat on a plate and pour the sauce over it. Serve with rice.
