Chicken Cubes with Mango and Chilli
The perfect chicken cubes with mango and chilli recipe with a picture and simple step-by-step instructions.
- 600 g Fresh chicken breast
- 0,5 Pc. Lemon fresh
- 1 Pc. Lemon zest
- 1 tbsp Mustard
- 2 Pc Peeled garlic cloves
- 6 tbsp Cold pressed olive oil
- 3 Pc. Fresh mango
- 2 bunch Spring onions fresh
- 4 Pc. Fresh chilli or peperoncini
- 0,5 dl Chicken broth
- 0,5 dl Salt
- Cut the chicken breast into larger cubes
- 2nd zest of 1 lemon, mustard, pressed garlic cloves and 2 tablespoons of olive oil stir well and add the chicken cubes. Mix everything well and let it steep.
- Peel the mango and cut the pulp into 2cm cubes. Cut the spring onions with the juicy greens into rings, core the chilli / peperoncini and cut into fine rings.
- Sear the chicken cubes with 2 tablespoons of olive oil in a large frying pan.
- Sauté the chilli and spring onions with 2 tablespoons of olive oil in a second frying pan, add the mango cubes and deglaze with the juice of 1/2 lemon and the boullion, add a little salt and simmer gently for about 5 minutes. Then add the meat and stir in carefully.
