Ingredients for 2 servings:
- 500 g chicken breast
- 1 onion(s)
- 2 garlic cloves
- 100 ml tomatoes, pureed
- 2 tbsp, heaped curry powder
- 200 ml coconut milk
- oil
- salt and pepper
- e.g. parsley

easy and quick to prepare
Finely dice the onion and garlic and sauté in a large skillet over medium-low heat. Add the passata and curry powder and stir to combine. Add the diced chicken breast, stir to combine, and fry briefly over high heat, taking care not to overcook. Then add the coconut milk and mix until smooth. Cook for another five minutes. Sprinkle with parsley, if desired, before serving.
