Turkey with sweet potato and broccoli

Ingredients for 1 servings:

  • 1 small sweet potato(s)
  • 1 tsp rapeseed oil
  • 1 pinch of salt
  • 1 pinch(s) curry powder
  • 250 g broccoli
  • 150 g turkey breast or chicken
  • 1 tsp rapeseed oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Preheat oven to 200°C (fan). Peel and wash the sweet potato, then cut into bite-sized cubes. Arrange on a baking sheet lined with parchment paper and toss roughly with oil, curry powder, and salt. Bake in the hot oven for about 15 minutes. Cook the broccoli in a pot of salted water (it tastes crispier fresh). Cut the turkey breast into strips and season with salt and pepper. Add rapeseed oil to a pan and sear the meat all over. Serve with potatoes and vegetables. 589 kcal, 47 g protein, 54 g carbohydrates, 19 g fat per serving.
