Chicken fillet in oriental marinade and sauce

Ingredients for 4 servings:

  • 600 g chicken breast fillet(s)
  • ½ lime(s) or lemon
  • 1 tsp, leveled cinnamon powder
  • 1 tsp, leveled paprika powder
  • 1 tsp, leveled curry powder
  • 1 tsp, leveled salt
  • ½ tsp cayenne pepper
  • 2 cloves garlic
  • 2 m.-sized onion(s)
  • 1 tbsp olive oil
  • 500 g tomatoes, pureed

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 40 minutes

For the marinade, squeeze the juice of half a lime (or lemon if you don’t have one) into a container. Finely chop or press the garlic cloves and add them. Add all the spices and stir well. Then cut the chicken fillet into small pieces or strips. Pour the marinade over it, cover, and refrigerate for at least 1 hour. For the sauce, peel the onion and finely dice it. Heat olive oil in a wok or frying pan and sauté the diced onion until translucent. Then add the passata and stir briefly. Add the chicken fillet with the marinade and simmer on low heat for about 20 minutes, until the chicken fillet is cooked and nice and juicy. You can serve this with brown rice or basmati rice, for example. Delicious with salad, fresh pineapple, fresh peaches, etc. The calories only refer to the above recipe, including the chicken fillet; the calories from rice or similar are not included in this recipe.
