Chicken Fillet Tips in Porcini Mushroom Sauce

Chicken fillet tips
- 7 small Chicken fillet tips
- 7 small Salt and pepper
- 7 small Turmeric
- 7 small Clarified butter
Porcini mushroom sauce
- 150 g Fresh boletus mushrooms
- 1 small Onion red
- 1 small Clarified butter
- 300 ml Vegetable broth
- 1 tablespoon Gourmet fine seasoning
- 150 ml Sour cream
- 3 tablespoon Finely chopped parsley
- 3 tablespoon Lemon juice
- 1 tablespoon Maizena
Chicken fillet tips
- Season the chicken fillet tips with salt, pepper and turmeric – fry in clarified butter – deglaze with a small dash of vegetable stock – cover, switch off the stove and finish cooking on the switched off stove for approx. 15 minutes
Porcini mushroom sauce
- Cut the onion into small cubes and sweat it in clarified butter – add the porcini mushrooms cut into coarse cubes and roast them with them – pour in the vegetable stock – season with gourmet fine seasoning, salt and pepper – cover and cook on a low flame for approx. 10 minutes
- 1 tablespoons of sour cream with a little water and maizena (or mondamin) – add the remaining sour cream to the mushroom sauce and briefly bring to the boil – season with lemon juice – add sour cream / maizena / mixture and bring to the boil again briefly so that it thickens a little – add parsley
serve
- the fillet tips were served in the boletus sauce with napkin dumplings (from my frozen stock)
