Ingredients for 4 servings:
- 50 ml olive oil
- 4 tbsp lemon juice
- 3 clove(s) garlic, squeezed
- 2 tbsp basil, chopped
- 2 tbsp sage, chopped
- 2 tbsp flat-leaf parsley, chopped
- 4 chicken breast fillets
- 4 tbsp olive oil, for frying
- 4 tbsp sugar
- 4 tbsp butter
- 2 mango(s), ripe, the flesh
- 200 ml wine, Riesling
- 200 ml chicken broth
- 120 ml cream
- 1 tsp chili powder
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Mix the olive oil, lemon juice, garlic, and herbs well. Place the chicken breasts in a bowl, coat them all over with the marinade, pour over the remaining marinade, and let them marinate for 3 to 4 hours. For the sauce, stir the sugar in a pan until light brown and caramelize. Add the butter and mango flesh and stir well. Pour in the Riesling and chicken stock. Let the sauce simmer over low heat for about 10 minutes. Add the cream and chili and simmer for another 10 minutes. Season with salt and pepper. Remove the chicken breast fillets from the marinade. Season with salt and pepper. Heat the olive oil in the pan and sear the chicken breast fillets on both sides. Remove the pan from the heat, cover, and cook the meat over low heat until juicy. Serve with the mango sauce.
