Chicken in Parma ham

Ingredients for 6 servings:

  • 6 chicken breast fillets
  • 6 slices of Parma ham
  • 2 tbsp Provençal herbs (amount to taste)
  • Salt and pepper, freshly ground
  • some flour
  • Fat, for the shape

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Lay out the Parma ham slices side by side on the work surface, then place the chicken breast on top. Sprinkle the meat generously with finely ground herbs, season with pepper, and lightly salt, as the ham is already quite salty. Roll up the meat and secure with toothpicks. Dust the rolls with a little flour and place them, sealed side down, in a greased, shallow dish. Bake in the oven at 200°C/Gas Mark 4 for 30 minutes. Leave the dish uncovered so the ham crust crisps up nicely. The gnocchi in sage butter, which I also found here at Chefkoch, go well as a side dish.
